Blueberry Compote Recipe

An easy blueberry compote recipe with the right balance of sweetness and tartness. Only 4 ingredients and ready in under 15 minutes!

Ingredients 

  • 2 cups fresh or frozen blueberries I used frozen wild blueberries
  • 1 tablespoon maple syrup
  • 2 teaspoons lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  • Heat a small saucepan on medium heat. Add the blueberries to the pan.
  • Zest the lemon and add to the berries. Add the vanilla and maple syrup*.
  • Squeeze 1 tablespoon lemon juice from the zested lemon and set aside.
  • Let the blueberries simmer for about 8 minutes, stirring every 1-2 minutes. The blueberries will begin to release water and soften. Smash 5-6 times with the back of your spoon to release the liquid. Simmer for an additional 3-5 minutes until it turns into a watery syrup consistency. The compote thickens as it cools. If you prefer yours to be more liquid, add 2 tablespoons of water at a time until you reach your desired consistency.
  • Let it cool. The compote will thicken as it cools. Scoop it onto your favorite oats, chia pudding, or yogurt.

Notes

For the maple syrup, add it to taste, depending on how sweet your blueberries are. If you don't like things too sweet, start with ½ tablespoon and increase it to your taste.
Cooking time will vary depending on whether you use fresh or frozen blueberries. Frozen will take slightly longer, and fresh will be shorter. 
Storage: Allow your compote to cool completely. Store it in an airtight glass jar or container in the refrigerator for up to one week. You can also freeze it in small portions for up to one month. To reheat, simply warm it on the stovetop or microwave until it reaches your desired consistency.
