Corn Chaat with Peanuts

A vibrant chaat is sure to please guests as a delicious appetizer or as a quick and easy mid-day snack! Made with easy ingredients and within 15 minutes!

Ingredients 

  • 2 cups corn,, frozen
  • 1 cup peanuts
  • 1 tablespoon oil,, I used vegetable oil
  • ½ red bell pepper,, diced
  • 1 small tomato,, diced
  • 1 small red onion,, diced
  • 1 garlic,, minced
  • 1 juice of lemon
  • 1 tablespoon chaat masala,, see notes
  • ½ teaspoon cumin powder
  • ¼ teaspoon red chili powder
  • salt to taste,, see notes
  • cilantro, , for garnish

Instructions

  • In a medium pot, fill with water and bring to a boil. Add frozen corn and boil for 5 minutes or until corn kernels start floating. Drain and let cool.
  • In a medium pan, heat oil at medium-low heat. Add peanuts and let them lightly brown for about 8-10 mins while stirring constantly. The peanuts will brown fast so don't let them burn! Once they're toasted, remove from heat and let cool.
  • In a small bowl, combine all the ingredients and mix well. If you prefer, add salt to your taste.

Notes

  • If you don't have chaat masala, other substitutes that work well are garam masala or pani puri masala. The ratio will be slightly different for each one. I recommend starting with 1 tablespoon and add more as needed.
  • The masalas have salt included so I recommend tasting the chaat before adding salt and adjusting to your taste.
