Tofu Chocolate Mousse

- 1 package silken tofu (14 oz)
- 4 oz bar of semi-sweet baking chocolate bar, melted
- 2 tablespoon maple syrup
- ½ teaspoon vanilla extract
- Optional: pinch of salt
Break the chocolate into chunks. In a heat-proof bowl, melt the chocolate in the microwave. Heat for 30 seconds first then 10-15 seconds at a time until it's melted, stirring each time.
In a food processor, add the tofu, melted chocolate, vanilla, and maple syrup and blend until smooth.
Transfer into serving ramekins and chill in the fridge for 2 hours or until it’s set.
Drizzle with additional chocolate, chocolate chunks, and sea salt for serving!
