Instant Pot Moong Dal Khichdi

Nourish yourself with moong dal khichdi, the ultimate Indian comfort food. This dish made with rice and lentils is wholesome and filling.

Ingredients 

  • ½ cup basmati rice
  • ½ cup moong dal (split mung beans without skin)
  • 2 tablespoons ghee or oil of choice or butter
  • 3 cups water
  • 1 teaspoon salt + more to taste
  • 1 teaspoon turmeric
  • Optional: Additional ghee or butter for serving

Instructions

  • Wash rice and lentils to remove any impurities (about 3-4 times).
  • To the Instant pot, add the washed lentils and rice, turmeric, salt and water. Mix well and close the Instant Pot lid.
  • Set the valve to Sealing mode, and set the Instant Pot to Pressure Cook mode on high for 6 minutes. Let the pressure release naturally.
  • Once complete, open the Instant pot and mix well. Adjust to your salt preference and top with ghee, cilantro, pickle, or yogurt and serve hot.

Notes

To make this vegan, you can add vegan butter, or oil.
