What is Khichdi

Khichdi is a traditional Indian dish that is made by cooking lentils and rice together. It is often referred to as comfort food due to its simple preparation and easy-to-digest nature. Khichdi, especially rice and moong dal khichdi, is known for its nutritional benefits. It is a wholesome meal providing essential nutrients like proteins and carbohydrates.

In Ayurveda, kitchari is a common staple. It is known to have balancing effects for all three of the doshas (tridoshic) making it a popular dish and easy to digest for all.

A simple khichdi can be made with rice and various lentils such as moong dal, masoor dal, or toor dal. I prefer mine simple without any added seasonings except salt, turmeric, and ghee. When I make a masala khichdi (vaghareli khichdi), I like to season it with cumin seeds, green chili, garlic, ginger, and vegetables to add flavor. This popular Indian dish can be customized with different ingredients to meet individual preferences.

People of all ages enjoy khichdi for its mild taste and comforting properties. The simple version works great for babies, kids, and adults! Whether served plain or with accompaniments, khichdi is a popular choice for a balanced and nutritious meal.

⭐ Benefits of Moong Dal Khichdi

Khichdi offers several health benefits as it combines lentils and rice, providing a good balance of proteins and carbohydrates. It is easy to digest, making it an ideal choice during recovery from illness. Simple khichdi also aids in regulating digestion and is often a popular comfort food.

Khichdi is a low-fat and high-fiber dish that helps maintain a healthy gut and promote overall well-being. It is also a great source of energy and can be a fulfilling meal option for both lunch and dinner.

Along with the added nutrients from lentils, khichdi is also a great source of Vitamin A and iron. Khichdi supports muscle growth and repair, which makes it a beneficial addition for vegetarians and those looking for plant-based protein options. You can also make it your own to suit different taste preferences while still reaping the benefits of a wholesome meal.

📋 Ingredients in Moong Dal Khichri

The simplicity of the ingredients makes khichdi an easy and quick recipe to prepare, ideal for a comforting meal anytime.

  • Moong dal
  • Rice. Short-grain rice or Basmati rice is best used for khichdi.
  • Flavor: turmeric and salt. For this plain khichdi, I like to keep it simple. You are welcome to temper cumin seeds in ghee before cooking the khichdi if you'd like.
  • Ghee. I make homemade ghee, but you can now find ghee in most grocery stores.

📖 How to Make Moong Dal Khichdi

Making khichdi is a straightforward process that involves cooking lentils and rice together until they are soft and well-cooked. Start by washing the moong dal and rice thoroughly (3-4 times) to remove impurities.

Cook the mixture until it reaches a smooth consistency. The consistency of your khichdi varies depending on your preference and the proportions of rice and moong dal. Once cooked, garnish the khichdi with a dollop of ghee and serve hot with your favorite accompaniments.

For added taste, you can also temper the khichdi with ghee, cumin seeds, and red chili before serving. This simple yet satisfying dish is perfect for a comforting meal or when you crave a warm and nourishing bowl of goodness.

Below are 3 methods that I like to use for cooking khichdi: Stovetop, rice cooker, and Instant Pot. Another common method for making khichdi is to use a pressure cooker. My favorite one is the Instant Pot version!

📖 Instant Pot Khichdi

Using the Instant Pot has revolutionized cooking, making it easier and quicker to prepare dishes like this simple khichdi. The Instant Pot version of moong dal khichdi offers a time-saving cooking method with the convenience of automated pressure cooking. Enjoy the same flavors and textures of this classic dish in a fraction of the time, perfect for busy days or when you crave a delicious homemade meal.

  • Add washed moong dal and rice to the pot.
  • Pour in water, turmeric, and salt, and give everything a good stir before sealing the Instant Pot.
  • Cook the khichdi on high pressure for a few minutes, followed by a natural pressure release.
  • Once done, garnish the khichdi with coriander leaves and serve it hot with a side of raita or pickle for a satisfying meal.

📖 Stovetop Khichdi

For those who prefer the traditional stovetop method, making khichdi on the stove is simple. The stovetop version of moong dal khichdi allows for a hands-on cooking experience, where you can monitor the dish's progress and adjust the seasonings to suit your taste. It's a wholesome and comforting meal that is sure to satisfy your cravings.

  • Add washed moong dal and rice to the pot.
  • Pour in water, turmeric, and salt, and stir the mixture well.
  • Let the khichdi simmer on low heat until the lentils and rice are fully cooked.
  • Serve the hot khichdi with a drizzle of ghee, a side of pickles, and papad for the perfect comfort in a bowl.

📖 Rice Cooker Khichdi

For a hassle-free cooking experience, khichdi in a rice cooker is a convenient option. The rice cooker version of moong dal khichdi simplifies the cooking process. It's a convenient way to prepare this traditional recipe without compromising on taste or nutrition, whether using an Instant Pot or a pressure cooker for your khichdi recipe.

  • Add washed moong dal, rice, water, turmeric, and salt to the rice cooker pot. Give the ingredients a gentle mix and close the lid.
  • Set the rice cooker to the desired setting for cooking lentils or rice and let it do its magic.
  • Once the khichdi is cooked, fluff it gently with a fork and garnish with fresh coriander leaves.
  • Serve the aromatic khichdi hot with a side of raita or your favorite chutney for a delightful meal.

🍽 What to Serve with Moong Dal Khichri

Moong dal khichdi is typically served hot with a side of plain yogurt, pickle, or papad for a complete meal. However, you can pair it with a fresh salad or pickled vegetables. A dollop of ghee on top of the khichdi is a must in my household! However, if you are vegan, omit the ghee.

I love to garnish mine with fresh cilantro, a dollop of yogurt, cucumber raita, or lasan ni chutney (garlic chutney).

Whether this meal is enjoyed for lunch or dinner, moong dal khichdi is guaranteed to warm your heart and soul.

💭 Tips and Variations

  1. Rinse the lentils and rice thoroughly to remove impurities and excess starch.
  2. For added richness, drizzle ghee over the khichdi before serving.
  3. If you like your khichdi less mushy, add less water or use toor dal. To make a mushier consistency, adjust the water content immediately after it's completed cooking.
  4. Garnish the khichdi with fresh herbs like coriander or mint.
  5. Make masala khichdi as an alternative to this dish. Sauté cumin seeds, green chili, garlic, and onions, then add carrots, peas, and spinach. Add the khichdi and season with salt and lemon.
  6. Spices such as garam masala can also add more flavor to the dish.
