Potato Sandwich Recipe (Aloo Sandwich)
Ingredients
- 4-6 slices bread of choice, I use sourdough
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 inch ginger, chopped
- 2 tablespoons moong dal, washed
- 1 cup frozen peas and carrots mixed, thawed
- 2 large potatoes, diced
- 1 teaspoon salt
- 1 teaspoon turmeric powder
- 1 teaspoon amchur powder
- ½ teaspoon garam masala
- juice of 1 lime
Instructions
- Heat oil in a large pan. Add cumin seeds until they start popping. Add in ginger and washed moong dal.
- Add the peas, carrots, potatoes, and salt to the pan. Cover the pan for about 5 minutes while mixing in between, and cook until potatoes start to soften. If the mixture starts sticking, add a couple of tablespoons of water.
- Add the turmeric powder, amchur, and garam masala and cook for a few more minutes until the potatoes are tender and mashed with the back of the spatula.
- Squeeze lime juice and let the mixture cool completely.
- Using the back of the spatula, mash the mixture roughly.
