Potato Sandwich Recipe (Aloo Sandwich)

Make this Indian-style Potato Sandwich in under 30 minutes! Made with spiced potatoes and vegetables, this potato sandwich is delicious!

Ingredients 

  • 4-6 slices bread of choice, I use sourdough
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 inch ginger, chopped
  • 2 tablespoons moong dal, washed
  • 1 cup frozen peas and carrots mixed, thawed
  • 2 large potatoes, diced
  • 1 teaspoon salt
  • 1 teaspoon turmeric powder
  • 1 teaspoon amchur powder
  • ½ teaspoon garam masala
  • juice of 1 lime

Instructions

  • Heat oil in a large pan. Add cumin seeds until they start popping. Add in ginger and washed moong dal.
  • Add the peas, carrots, potatoes, and salt to the pan. Cover the pan for about 5 minutes while mixing in between, and cook until potatoes start to soften. If the mixture starts sticking, add a couple of tablespoons of water.
  • Add the turmeric powder, amchur, and garam masala and cook for a few more minutes until the potatoes are tender and mashed with the back of the spatula.
  • Squeeze lime juice and let the mixture cool completely.
  • Using the back of the spatula, mash the mixture roughly.
