Potato Sandwich Recipe (Aloo Sandwich)

- 4-6 slices bread of choice, I use sourdough
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 inch ginger, chopped
- 2 tablespoons moong dal, washed
- 1 cup frozen peas and carrots mixed, thawed
- 2 large potatoes, diced
- 1 teaspoon salt
- 1 teaspoon turmeric powder
- 1 teaspoon amchur powder
- ½ teaspoon garam masala
- juice of 1 lime
Heat oil in a large pan. Add cumin seeds until they start popping. Add in ginger and washed moong dal.
Add the peas, carrots, potatoes, and salt to the pan. Cover the pan for about 5 minutes while mixing in between, and cook until potatoes start to soften. If the mixture starts sticking, add a couple of tablespoons of water.
Add the turmeric powder, amchur, and garam masala and cook for a few more minutes until the potatoes are tender and mashed with the back of the spatula.
Squeeze lime juice and let the mixture cool completely.
Using the back of the spatula, mash the mixture roughly.
