Mini Vegan Baklava Cups

Mini Vegan Baklava Cups are a healthy version of baklava with an oat and almond flour base and a filling made with walnuts and pistachios with flavors of cinnamon, cloves, and orange zest.

Ingredients 

For the base:

  • 1 cup oat flour;, use gluten-free oats if allergic to gluten
  • ½ cup almond flour
  • 1 teaspoon cinnamon
  • ¼ cup coconut oil
  • 2 tablespoons of maple syrup
  • Pinch of salt

For the Filling:

  • 2 teaspoons cinnamon
  • 2 tablespoons pistachios
  • ½ cup walnuts
  • ½ teaspoon cloves
  • ¼ cup maple syrup
  • 1 teaspoon orange zest
  • Pinch of salt;, omit if you're using salted pistachios

Instructions

  • Preheat oven to 350°F.
  • Combine all ingredients of the base in a small bowl.
  • In a silicone mini muffin pan, scoop about 1 tablespoon of the base. Push a teaspoon or use your thumb to make room for the filling. If you don't have a silicone mini muffin pan, you may use a regular one, just grease with some coconut oil.
  • Finely grind the cloves into a powder form. Then, roughly crush the walnuts and pistachios to tiny pieces. Be careful not to grind too much otherwise your mixture will be like a paste versus crumbly. Add the cinnamon and pinch of salt.
  • In another small bowl, zest the orange peel and combine with maple syrup. Add about 3 tablespoons of the syrup mixture to the nut mixture and combine. Set the remaining tablespoon of syrup aside for later use.
  • Bake for about 15-20 minutes or until biscuit base starts turning a golden brown.
  • Remove from oven and drizzle the cups with the remaining maple syrup and orange zest mixture while still hot in the pan.
  • Let the cups cool completely before removing from the molds. Enjoy these adorable little baklava cups at room temperature!

Notes

  • To make oat flour, take rolled oats and grind them finely into a powder. 
  • You can use any coffee grinder to make the cloves powdery or you can use clove powder. Cardamom is another alternative to clove, I just prefer clove better!
