- 3 cups refried beans;, may also use 16 oz can of refried beans
- 1 cup sour cream or plain greek yogurt
- ⅓ cup salsa
- 1 teaspoon paprika
- 1 teaspoon cumin powder
- 1 teaspoon garlic powder
- 1 jalapeño, diced
- 2 cups shredded cheese,, Mexican blend
Preheat oven to 400°F.
In a large bowl, mix together the sour cream and salsa until no clumps remain. Add the refried beans, jalapeños, paprika, cumin, garlic powder, and ¾ cup of the shredded cheese. Combine well.
Pour the bean mixture into a 9x9 baking dish and bake at 400°F for 10-15 minutes or until your cheese is bubbly.
Top with additional jalapeños, cilantro, and green onions.
- If your beans are already seasoned (like the Instant Pot Refried Beans recipe I use, you can adjust the seasonings to your taste).
- You are welcome to use 1 tablespoon of taco seasoning in place of the paprika, cumin, and garlic powder.
- Store your cheesy bean dip in the fridge after it's completely cooled in an air-tight container. I don't recommend freezing the bean dip. However, you can freeze homemade beans and use these in the recipe when needed!
