    Refried Bean Dip

    When it comes to Super Bowl appetizers, you have your classics. But sometimes you're just craving something hot and cheesy like this refried bean dip recipe. It's basically a hot and cheesy taco dip with refried beans. Make it as an appetizer for game day or a side for your Tex-Mex night. This easy bean dip will become a party favorite!

    This hot and cheesy refried bean dip is full of deliciousness. Made with refried beans, sour cream, salsa, jalapeños, seasonings, and loads of cheese for one of the best bean dips you'll ever have!

    📋 Ingredients

    This cheesy bean dip has simple ingredients that you probably have in your fridge for a Mexican-inspired food night.

    • Refried beans. I make this bean dip with refried beans recipe for this but if you're short on time, it's perfectly fine to use canned refried beans (I recommend getting low sodium or no salt added so you can adjust to your salt taste)! For reference, the homemade recipe makes about 3 cups and 1, 16 oz can is about 3.5 cups.
    • Seasonings. You are welcome to use taco seasoning, however, I like to add my seasonings so I use paprika, cumin, and salt. If you are using canned refried beans, you can add garlic powder and onion powder (my refried beans recipe is seasoned already).
    • Sour Cream. This is what adds that creamy goodness.
    • Salsa. This gives it a burst of flavor. I recommend using a salsa that is not too watery. You can also use a can of diced tomatoes and green chilies with the liquid removed or make your own salsa.
    • Spice. This is a preference but I love the addition of diced jalapeños to give it a bit of a kick.
    • Cheese. Because, duh, that's the best part of a bean and cheese dip! I used Kirkland's Mexican Blend Shredded cheese from Costco as this has no animal rennet in the cheese and is vegetarian friendly. Tillamook also does not use animal rennet so that's a great option as well!

    📖 Instructions

    1. Whip together the sour cream and salsa until no clumps remain. Add the refried beans, jalapeños, seasonings, and cheese and combine well. Pour into a 9x9 baking dish and bake at 450 until your cheese is bubbly and brown.
    2. Top with additional jalapeños, cilantro, and green onions.

    🍴Storage

    Store your cheesy bean dip in the fridge after it's completely cooled in an air-tight container. I don't recommend freezing the bean dip. However, you can freeze homemade beans and use these in the recipe when needed!

    Ingredients 

    • 3 cups refried beans;, may also use 16 oz can of refried beans
    • 1 cup sour cream or plain greek yogurt
    • ⅓ cup salsa
    • 1 teaspoon paprika
    • 1 teaspoon cumin powder
    • 1 teaspoon garlic powder
    • 1 jalapeño, diced
    • 2 cups shredded cheese,, Mexican blend

    Instructions

    • Preheat oven to 400°F.
    • In a large bowl, mix together the sour cream and salsa until no clumps remain. Add the refried beans, jalapeños, paprika, cumin, garlic powder, and ¾ cup of the shredded cheese. Combine well.
    • Pour the bean mixture into a 9x9 baking dish and bake at 400°F for 10-15 minutes or until your cheese is bubbly.
    • Top with additional jalapeños, cilantro, and green onions.

    Notes

    • If your beans are already seasoned (like the Instant Pot Refried Beans recipe I use, you can adjust the seasonings to your taste).
    • You are welcome to use 1 tablespoon of taco seasoning in place of the paprika, cumin, and garlic powder.
    • Store your cheesy bean dip in the fridge after it's completely cooled in an air-tight container. I don't recommend freezing the bean dip. However, you can freeze homemade beans and use these in the recipe when needed!
