⭐ Why You'll Love Whipped Ricotta

  • Quick and easy: takes only 5 minutes of prep!
  • Use it as a dip or spread, or top it on pasta or pizza.
  • Higher protein content (8 grams of protein!) plus protein from the pistachios.
  • Creamy and airy. Perfect for dipping bread.
  • Only 5 ingredients.

📋 Ingredients for Whipped Ricotta

  • Ricotta cheese. I used whole milk ricotta for this recipe. However, in the past, I have done this with part-skim and it still works well.
  • Extra Virgin Olive Oil. Use a good quality olive oil for those bold flavors to stand out. It also allows the dip to fluff perfectly.
  • Honey. I love the sweet flavors honey adds to a sweet and savory dip. Honey is commonly paired with ricotta but add it with the rest of the ingredients and it really elevates the whipped ricotta cheese. If you're making this with a vegan ricotta, I suggest using maple syrup as your sweetener.
  • Lemon zest. This really adds that tang to the sweet-and-savory. I don't recommend skipping this step!
  • Additional Flavors. Fine sea salt and black pepper.
  • Roasted Pistachios. You can buy roasted pistachios or roast them on the stove yourself. I like to slightly crush them with a mortar and pestle or in a reusable ziplock bag and garnish on top.

📖 Instructions

This whipped ricotta dip takes only 5 minutes. Whip ricotta cheese, olive oil, salt, honey, black pepper, and lemon zest using a food processor until fluffy. Pour the whipped ricotta in a bowl, then garnish with roasted pistachios and serve. Additional garnishes: more black pepper, lemon zest, or honey; roasted garlic; basil.

🍽 Serving Suggestions

  • Spread it on toast, mix it into pasta (I loved using this with my Roasted Vegetable Pasta), dollop it on pizza, dip veggies in it, eat it with chips, or just eat it straight from the spoon!
  • Ricotta party platter idea: Serve it on a board with crackers, olives, veggies, and warm bread for an easy appetizer spread. My favorite bread is a fresh loaf of sourdough or ciabatta rolls.
  • Lazy day lunch idea: make a big batch of whipped ricotta and keep it in the fridge to spread on sandwiches or wraps throughout the week. I love using whipped ricotta and homemade pesto with veggies in a sandwich for a quick lunch.
  • Serve it with pita chips or naan dippers for a quick snack.

💭 Tips and Variations

  • I love adding truffle oil in place of olive oil or truffle salt in place of sea salt.
  • Blend the ricotta with some roasted garlic for a more bold flavor.
  • No food processor? Not a problem! Use an electric mixer and whip until you reach the same whipped consistency as shown in the images. You can also use an immersion blender until you reach a fluffy ricotta dip.
  • To make this whipped ricotta dip ahead, whip the ricotta in advance then garnish right before serving.
  • Store whipped ricotta in an airtight container in the fridge for 3 to 4 days.

Whipped ricotta is a game-changer. Whether you're spreading it on toast, topping pasta with it, or using it as a dip for veggies, this creamy concoction brings a whole new level of yum to the table. So next time you're feeling fancy but don't want to put in too much effort, whip up some ricotta and thank me later!
