- 2 cups whole milk ricotta
- 2 tablespoons extra virgin olive oil
- 2 tablespoons honey;, or truffle honey
- ½ teaspoon fine sea salt
- ¼ teaspoon black pepper
- 1 teaspoon lemon zest + more for garnishing
- ¼ cup roasted pistachios, roughly crushed
Whip ricotta cheese, olive oil, salt, honey, black pepper, and lemon zest using a food processor until fluffy.
Pour the whipped ricotta in a bowl, then garnish with roasted pistachios and serve.
- Additional garnishes options: more black pepper, lemon zest, or honey; roasted garlic; basil.
- No food processor? Use an electric mixer until and whip until you reach the same whipped consistency as shown in the images. You can also use an immersion blender until you reached a fluffy ricotta dip.
- To make this whipped ricotta dip ahead, whip the ricotta in advance then garnish right before serving.
- Store whipped ricotta in an airtight container in the fridge for 3 to 4 days.
