The tortillas must be a thicker kind, I would not attempt to use thinner tortillas as the pinwheels will get soggy or break as you are trying to roll them. Also, I use flour tortillas. Corn tortillas tend to break apart as you roll them as well. If you are gluten-free, look for gluten-free flour tortillas.

    Fillings. The possibilities here are endless, so consider your guests' preferences and any dietary restrictions. For my pinwheels, I used the following:

    Ingredients for Cream Cheese Dip
    • Cream cheese. I use an 8 oz package of cream cheese.
    • Salsa. I use Pace Picante for this recipe. This one is the least runny and gives me the consistency I like. You can use homemade, however, I recommend straining some of the liquid to avoid a runny dip.
    • Olives. I buy canned olives. For even more convenience, you can buy them pre-chopped and add them in.
    • Cilantro. Cilantro always adds the perfect flavor to Mexican and Indian-inspired recipes.
    • Scallions. Adds great texture and flavor.
    • Garlic. Mince your garlic as fine as possible. You can also grate or use a garlic press so people don't eat chunks of raw garlic. This also adds a bit of a kick so you can adjust to less, more, or omit if you'd like.
    • Pickled jalapeños. This adds a punch of flavor, texture, and a kick to the cream cheese salsa dip. You can adjust the spice based on the type of jalapeños you use or you can use fresh jalapeños. I think pickled jalapeños give it the perfect tang.

    📖  Step-by-Step Instructions for Creating Effortless Tortilla Pinwheels

    For this recipe, I'd like to clarify that I like our salsa and cream cheese dip to be chunky. However, if you want a fine, creamy dip, you can blend your ingredients in a food chopper or use an immersion blender until you reach your desired consistency.

    • Soften the Cream Cheese. If you are running short on time, you can add your cream cheese to the food chopper to get a smooth consistency or soften it in the microwave.
    • Combine the Filling. After your cream cheese is softened, add it to a bowl with a stand mixer or hand mixer. Add your salsa to the cream cheese and allow it to combine well. Add the remaining ingredients and mix well.
    • Fill the Tortillas. Begin by placing a tortilla flat on a clean surface. Make sure to choose a tortilla that is pliable and not too dry, as it will be easier to roll without cracking. Take a spoonful or two of your chosen filling and evenly distribute it across the tortilla.
    • Roll it up. Starting from one end of the tortilla, tightly roll it up into a cylinder shape. Apply gentle pressure as you roll to keep the fillings intact and prevent any air pockets from forming.
    • Chill and slice. Place the rolled tortilla pinwheels in the refrigerator and allow them to chill for at least an hour. This will help the fillings set and make slicing them into perfect, attractive rounds much easier.

    Ingredients 

    • 4 large flour tortillas, burrito sized (for gluten-free: use corn or gluten-free flour tortillas)
    • 1 package cream cheese
    • ½ cup chunky salsa
    • ¼ cup chopped olives
    • ½ cup chopped cilantro
    • 2 scallion stems
    • 2 cloves garlic
    • ½ cup pickled jalapenos, chopped

    Instructions

    • Add softened cream cheese to a bowl with a stand mixer or hand mixer. Add your salsa to the cream cheese and allow it to combine well.
    • Add the olives, cilantro, scallions, garlic, and jalapeños, and mix well.
    • Scoop 1 cookie scoop of the mixture onto each tortilla. Spread the mixture to cover the tortilla except for the last inch where the roll will end. The mixture will spread as you roll.
    • Starting at one edge, roll each tortilla. With the seam side down, place them in a large tray. Cover the tray and place it in the fridge to chill for at least 1 hour or overnight.
    • After they have chilled, slice each tortilla roll into 1-inch pieces. Place them on a serving tray and serve! You can save them for later or serve immediately.

    Notes

    This recipe mades about 40 pinwheels. If you need to make more, double the entire recipe.
    Leftovers also last for 2-3 days in the fridge.
