Chocolate Oat Bars

These no bake chocolate oat bars are vegan, made without refined sugar, and the perfect healthy snack to satisfy your chocolate cravings.

Easy chocolate dessert recipes are my favorite, ESPECIALLY these easy Chocolate Oat Bars. Bonus points if they have a little extra nutrition in them and they're a kid-approved dessert. These raw chocolate oat bars have become a favorite in our household as a quick snack or a healthy sweet treat option.

These are similar to bliss balls recipes except in the form of bars. It's basically the lazy way to make the bliss balls. The chocolate oats bars are the chocolate, no bake, blended version of my crumble bars recipe!

How to Make No Bake Chocolate Oat Bars

  • To start, the crust requires pecans or walnuts, rolled oats, dates, coconut oil, and a splash of vanilla. I use my favorite recipe from my No Bake Peanut Butter Protein Bars for the chocolatey center. You will need coconut oil, cocoa powder, vanilla, and maple syrup as the sweetener.
  • Blend the ingredients in a food processor until you have a sticky dough-like consistency.
  • Then make the delicious chocolate center. Add the coconut oil, cocoa powder, vanilla, and maple syrup or liquid sweetener of your choice.

Put it all together and freeze it for 1.5-2 hours. You and your family now have the perfect chocolate snack bar to indulge your chocolate cravings in.

Chocolate Oat Bars

These no bake chocolate oat bars are vegan, made without refined sugar, and the perfect healthy snack to satisfy your chocolate cravings.

Ingredients 

Crust

  • 1 cups walnut or pecan halves
  • 1 cups rolled oats
  • 8 whole medjool dates,, pitted
  • 2 tablespoons coconut oil,, melted
  • 1 teaspoon vanilla
  • pinch of salt

Chocolate Layer

Instructions

  • In a food processor, pulse the pecan or walnuts and oats until a fine, crumbly texture. Add the dates, coconut oil, vanilla, and salt and pulse until you form a sticky mixture.
  • Line a 9×5 loaf pan with parchment paper. Press ⅔ of the mixture into the pan to make the crust of the bars.
  • Add the coconut oil, cocoa powder, vanilla, and maple syrup in a small bowl. Melt in the microwave for about 15-20 seconds until a liquid consistency. Pour over the crust layer.
  • Sprinkle the remaining crust on top to resemble a crumbly topping and press gently.
  • Cover and place the bars in the freezer and chill for 1.5-2 hours. Cut into bars into squares or into long bars and serve chilled!
  • Refrigerate or freeze bars for storage.

Notes

If you feel your crust mixture is too dry, add an extra tablespoon of oil.
