Most of the vegetarian breakfast foods are prep-ahead items and vegan (all can easily be made vegan since there is no egg in any of them)! All of these are vegetarian breakfast ideas without eggs.

    To Make These a Vegan Breakfast

    If you are looking for only vegan options most of these can be replaced with a vegan substitute. For a vegan yogurt option, I recommend soy for the savory options and coconut for the sweet options. For the vegan cheese options, replace with your favorite vegan cheese. For a vegan milk option, I recommend going with plain soy milk. This gives you the creamiest consistency with your dishes.

    ⭐ My Favorites

    There are so many delicious options on this list of vegetarian breakfast ideas. But if I had to pick, I love the Breakfast Potato Hash for a quick, savory option. It's easy to make, has the perfect amount of spice and a great option for when you want something brunch-like. Tofu Scramble is a good weekday/everyday breakfast option for me. I make this for the week and eat it for the next few days. You can vary up the vegetables with what's in season. For a sweet option, I also LOVE the Lemon Ricotta Pancakes. These are so delicious and taste like such a treat!

    If I am making breakfast for guests, I love making the Hash Brown Casserole-it's always a hit! Even with the kids! You can prep most of it ahead of time and refrigerate until you're ready to bake the morning of.
